Bazaar Classics: Smoked Oysters

Raw oysters, the Bazaar way: with wonder and surprising flavor. Classic oysters are served with mignonette, a red wine vinegar-based sauced with minced shallot and fresh-ground black pepper. Here, the fresh oysters are applewood-smoked and then topped with a mignonette made with flavor-packed compressed apples and mignonette air, then trapped under a cloudy dome of applewood smoke that’s released tableside.
